13 -14 oz of fruit medley (Safeway)
1 cup of boiling water
1 teaspoon of bi carb of soda
125g of butter
1 cup of sugar ( I used raw sugar)
2egg beaten
1cup of S.R. fl
1 cup of P. Fl
Soak fruit in boiling water with be carb of soda , for one and a half hours, stirrin a few times while soaking. Beat butter and sugar well add eggs, then fruit and flour. Bake in a mod. Oven for bout 1hr. Will make two log cakes. ( I did not us above method, I used a boiled fruit cake method with a good result)
