Same ingred. as above but 1/2 brown sugar and 1/2 white sugar
12 oz. dried apricots plus 1/2 lb. of sultanas
1 teaspoon of ginger instead of mixed spice
Boiled fruit – creamed sugar and eggs – added butter to warm fruit mix and
allowed to cool completely. Added fruit to egg and sugar then flour and baked
for an 1 and 1/2hrs. a 15O C. Top browns quickly and needs covering early.
